Recipe Recommendation — November

When we receive new recipes, they are evaluated for cost, simplicity and general yumminess before they are included in our rotation. We even have a volunteer recipe team that looks for recipes and tries them out as needed. On weekends and school breaks, families receive the recipe along with the needed ingredients to prepare a healthy family meal. Every child, no matter their circumstances, needs healthy food in sufficient quantities to grow and to perform optimally in school. Your giving to Hungry Souls makes it possible for children to have this food available at home when free and reduced-cost breakfasts and lunches are not available to them on weekends and breaks.
As you cook for your own family, keep your eyes open for simple, low cost, healthy recipes that might be perfect for our recipe catalog. Here is the recipe our volunteer recommended for you to enjoy with your own family:
Quick Pizza Soup
1 lb. ground beef
1 package Pepperoni Minis (optional)
2 cans (28 oz. each) condensed, tomato soup, undiluted
6 ½ c. water
1 jar (28 oz.) spaghetti sauce
1 Tbsp. Italian seasoning
2 c. (8 oz.) shredded cheddar cheese
In a Dutch oven, cook beef over medium heat until no longer pink, drain. Add soup, pepperoni, water, spaghetti sauce and Italian seasoning; bring to a boil. Reduce heat, simmer, uncovered for 15 minutes. Add cheese; cook and stir until melted.
Yield: 16 servings
